I found a new recipe, and for my normal repertoire, it's pretty gourmet! I made this stuffed acorn squash a couple weeks ago, and it was so good, I made it again last night. Hubby loved it, but the kids liked the stuffing better than the squash. I found it superb. It's definitely a keeper. I found this recipe on another blog, that of the "Gluten-free Goddess". This looks so good! I am going to try it tomorrow night also without meat. What did you do with your grains? Anything special?
I have a similar recipe that uses apple and sausage for stuffing, but I, too, would love to know what you did with your grains. I don't have the ones you mentioned, but I do have brown rice, bulgar, and barley that I think might be nice...So how did you season it?
So glad you want to try it too. I don't think you will be disappointed. I try and keep some cooked rice/millet/quinoa on hand for times when I need a quick supper starter. I like to add other grains to our diet besides eating brown rice every time! The quinoa is an ancient grain, but contains a lot more protein than rice alone. So, I cook it up 2 parts brown rice, and one part each of millet and quinoa. Make sure you rinse quinoa before you cook with it, as it would taste bitter from a (harmless) residue that it contains. I didn't season the grains with anyting for this recipe. I just used 3 heaping cups of the cooked grains, and proceeded with the recipe as it is written. It had plenty of flavor without the "beefy" taste. I may have added a bit of salt to the end result as well, since grains have no salt, and meat does a little. I am sure your other grains would work as well as the ones I used. Enjoy!
